*A black and grey mold-like substance is present in the ice chute of the self-service beverage dispenser. Affected area must be cleaned and sanitized prior to next use. Ice chute was cleaned and sanitized during inspection. Corrected On-Site. Repeat Violation.

*Hot dog (126°F) on the hot-holding rollers (left unit), taquito (126°F) on the hot-holding rollers (right unit) and chicken wings (122°F) in the counter-top hot-holding case were measured below range for hot-holding temperature. Hot food must be held at 135°F and below. Affected products were re-heated during inspection and placed back into hot-holiding units. Corrected On-Site. Repeat Violation.

*Sauerkraut (51°F) and ambient air temperature (52°F) in the TurboAir refrigerated condiments station were measured above range for cold-holding temperature. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. Sauerkraut was discarded during inspection. No time/temperature control for safety (TCS) foods may be stored in this unit until refrigerator is maintaining temperature at 41°F and below. Corrected On-Site. Repeat Violation.

*A dead mouse was found in a snap trap on the floor below electrical panels in employee area. Mouse droppings were also observed. Remove and discard dead mouse and droppings. Clean affected area.
